Smoking meats to perfection involves a lot of time, patience and good old-fashioned hard work;
most folks aren't willing to do what it takes - we are!
We cook our meats slow and easy using only seasoned hardwood to fuel the fires. Beef brisket
is a Texas tradition and one of our specialties. Our brisket spends up to sixteen hours in the pit
where it's transformed from a tough cut of beef into something so tender and delicious it's hard
to describe.
We run a clean, neat, organized professional operation, again something not normally
associated with Bar-barbe-que or catering for that matter.
We know what we are doing! After sixteen years we have gained enough experience to handle
almost anything that comes our way; large groups, bad weather, last minute changes,
equipment breakdowns, we take it all in stride.
Following are the three services that we currently offer our customer:
"Pick-Up Catering Service"
This service is for smaller groups, it works best for 50 or fewer guests. The customer picks up
their order at our facility and takes care of; set-up, serving and clean up. This service is our most
economical service making it the ideal solution when price is a consideration, but good food is a
necessity.
"Pit-Cooked Holiday Meats"
Pit-cooked; briskets, chicken, ribs, hams, boneless turkey breasts, roasts and smoked sausage
make great gifts for family or friends. These meats are very popular with individuals and

"Complete On-Site Catering Service"
This service is for larger groups. We are very,
very good at what we do. The customer's
worries are over when they contract with
Triple J's! They simply say where, when, and
what they want to serve; we take it from
there. This service is the mainstay of our
business at this time.
